A Piedmontese specialty, Gnocchi are another staple in the culinary traditions of Italy . The word Gnocchi means “knot”, which is the best way to describe the shape of these potato dumplings. Gnocchi is prepared by combining potatoes and flour into bite-size “knots” of dough. They are served like pasta or risotto, as a first course.
